Animation - Color Changing hair

I'm new to the 3d rendering scene, but I have years of experience doing video editing.

I'm playing around with the animation feature and while I think I have a pretty good grasp on how to use the key frames, I'm having a hard time trying to get my character's hair to change color over time.

Setting a keyframe at 0 and another at 100, if I change the diffuse color at 100 it changes it at 0.

Am I missing something?
