Two RTX 3060 12GB cards or RTX 3080 Ti

I have a plan later this year to upgrade my desktop
Here are my current specs:
Ryzen 5 5600x 6-core 3.7GHZ
RTX 3060 12GB
16GB RAM 3600MHZ
1TB SSD
750 Gold PSU
Looking to swap out the RTX 3060 for a RTX 3080 Ti... but is that the wise thing to do or is it better to have two 3060 cards as opposed to just one 3080 Ti card?
Does having two 3060s mean my scenes will render faster? Or the only thing it does is enabling me to handle more stuffs in the viewport?

Memory doesn't stack, except using two cards connected with nvLink and then only for materials. Each card works independently.
Keep the 3060 and add an 3080 Ti, maximum VRAM for Iray renders will still be 12GB's but the combination is faster than 3080 Ti.
