Hi -

When I click Simulate, it puts my character in the zero pose and slowly goes to the pose I want and then things try to drop into place. 
As it moves from zero pose to the pose I want, the hair and cloth moves in directions that I do not want. 
Is there a way to just have it in the pose I want and just drop it into place?

Any help/advice would be appreciated.

In the Simulation settings theer is an On/Off option for 'Start bones from memorized pose' which will turn that off, but ...your mileage may vary on the resultant simulation.

As a suggestion, whenever I use DForce items, as a habit now, I freeze and turn OFF "Visible in Simulation" for the items.

This way, until someone comes along and makes it possible to Simulate "JUST" the item you have selected, you don't get things simulating all over the place.

Not quite what you asked, but select the tiems you want to simulate and the oens you wnat them to collide with and then use the Simulate Selected command from the Simulation Settings pane's option menu (the lined/hamburger button in the top corner, or right-click the tab).
