Just wondering if it's possible to change the color of parts of a models skin to show bruises, blushing and the like.

    Yes. Much easier to obtain texuture pack with content you are seeking and apply. Such as this one:

    You can also create manually, in surfaces tab, by selecting skin texture of figure character, in drop down box, using various programs, photoshop, etc.... to add textures, save, apply. .
