Shader Baker Question - what is undoable?

Trying to figure this nifty feature out.
Providing one can get a texture to bake, if one selects the option to bake it to the figure, what exactly is one doing because it says it's undoable? Would Genesis forever be wearing plaid?

Its replacing any base texture the item loads with with your new texture. The undo is to just apply a Mat texture again.
