What exactly is called "dials" in daz Studio?

Are those "dials" the sliders both from 0 to 100 or from -100 to +100? Or the "dials" are something different and presumably circular?

Yes, the "dials" are sliders in Studio. I think the dials term still stems from Poser, where you have actual dials.
DAZ have never used the word 'dials', always sliders, but it may have cropped up in the notes for a Poser product installed into DAZ studio. Poser has dial-like controls as opposed to sliders.
I read now this tutorial about morphs which is from 2016 and the guy all the time talks about dials

S/he may be an ex-Poser user who says 'dials' out of habit.
It's definitely a Poser thing — I've also come across non-English-speaking content creators who consistently refer to the sliders as "motion-dials" and "virtual toothed wheels". It's a bit confusing at first, but you'll soon get used to it.
People sometimes talk about "dial-spun characters" meaning characters created by mixing different morphs. I've never head of slider-slid characters, but I think it has a nice sound.
