How to switch render between CPU and GPU?

In the Render Settings pane, under the Advanced tab. If you tick the box next to your Graphics Card then the render will be GPU unless the scene is too large for the RAM on your card (in which case it will fall back to a CPU render).

If you un-tick the box then (provided CPU is ticked) then only the CPU will be used for the render.
